Day 11: Speculoos

I just realized, while writing it, how ridiculously hilarious the english word for Spekulatius sounds.
So today our recipe is Spiced Speculoos, which is one of my favorite cookies. I love them because they have all those delicious christmas spices in them, then they are so crunchy and yummy and when you ate one, you'll want more.
Traditionally they are made with some kind of mold, so that you get them in different shapes. You can buy molds on the internet. I have one by Lurch and its made out of Silicon. 
If you don't have one, or don't want to buy one, you can also cut them out with cookie cutters.

For Spiced Speculoos you'll need:
4 1/4 cup(500g) Flour
1 Tsp. Baking powder
1 cup +1 Tbsp. Brown sugar
1 cup+1 Tbsp. Butter, cut into cubes
1/2 Tsp. Salt
1 Tsp. Cinnamon
1/2 Tsp. ground Cloves
1/2 Tsp. ground Cardamom
Zest of one Lemon
2 Eggs

1. Sift the flour, baking powder, salt and the spices into a large bowl. Add the sugar, butter, lemon zest and the eggs. With the dough hooks of an electric mixer, process the ingredients into a dough. 
Wrap in plastic, flatten into a disc and put the dough into the fridge for about an hour.

2. Preheat oven to 350°F/180°C.
Take dough out of the fridge and knead for a few minutes till it's soft again.
Dust your working space with flour and either roll out dough and cut out form with a cookie cutter, or press dough into a mold.
Place the cookies onto a parchment paper covered baking sheet and bake for 10-15 minutes.

I love those, with a simple glass of milk. With other drinks it would take away the incredible taste of all those spices, which will literately explode in your mouth when you take a bite out of them.
