They're even better when you decorate them with chocolate. I mean, can you ever go wrong with a bit of chocolate???
For those amazing Coconut Macaroons you'll need:
4 Egg whites
3/4 cup+ 2 Tbsp. (200g) Sugar
1 Tbsp. Vanilla Sugar
1/2 Tsp. Salt
1/4 Tsp. Cinnamon
2 cups(250g) Coconut flakes
1. Preheat oven to 270°F/130°C.
With an electric hand mixer on high speed, whisk the egg whites until they are stiff.
Let the sugar, vanilla sugar and salt trickle into the egg whites.
2.Cautiously fold in the cinnamon and the coconut flakes.
If you have it, you can use wafers to spoon the macaroons onto. If not, just use a parchment paper covered baking sheet.
Either with two spoon or a piping bag, place little heaps of macaroon dough onto a baking sheet/ wafers.
3. Bake for 30- 35 minutes, and let them cool completely.
If you want to, melt some chocolate and either dip the top or the bottom of the macaroons into chocolate.
I think they are best when they are crispy on the outside but fluffy on the inside.
Enjoy them with some hot cocoa or some tea.
