Banana Bread

Do you have bananas at home that are to ripe to eat?? Don't throw them away. You can make tasty, fluffy, moist banana bread out of them. It doesn't look fancy but it tastes really good and is easy to make. And I promise you, this recipe is a no fail recipe. You cannot mess this up.

Ingredients:

2 1/2 cups(300g) Flour
1 Tsp. Baking powder
1/2 Tsp. Salt
1/2 cup(110g) Sugar
1/2 cup(110g) Brown Sugar
1/3 cup + 1 Tbsp. (110ml)Sunflower Oil
2 large Eggs, at room temperature
4-5 ripe Bananas, mashed
1 cup(150g) chopped Walnuts, optional

Preheat oven to 350°F(180°C)

1. In a small bowl, sift together the flour, baking powder and salt. Set aside. In a bigger bowl mix together the sugars and the oil, give it quick stir and set aside so that the sugars can dissolve lightly.
Meanwhile, slice the bananas and either blend them in a mixer or mash them with a fork or a potato masher.

2. Add the eggs, one after the other and mix well after each addition. Now pour in the mashed bananas and mix well. Add the flour in two additions, and stir until the lumps are gone. If you want to add the walnuts, do so now and fold them in.

3. Grease a loaf pan or a casserole dish and fill in the batter. Bake for about 60-70 minutes. But beware,  the surface will rise and get brown after about 15-20 minutes, then you cover the banana bread for the remaining baking time with aluminum foil. To make sure that the bread is ready insert a cake tester.


With this recipe, the baking time is longer then the making time, but it is really delicious and you get rid of those pesky ripe bananas without throwing away food that is actually still edible.
