Yesterday I shared with you my recipe for my Spiced Pumpkin Streusel Muffins. Today I'm gonna show you a adulteration of the same recipe, so that you have tasty good looking cupcakes. A 2 in 1 recipe.
Basically you juste leave the streusel away during baking and make cream cheese frosting.
For the cream cheese frosting you'll need:
16 ounces (454g) Cream Cheese, at room temperature
1/2 cup(113g) Butter, softened
2 cup (240g) Powdered Sugar
1/2 Tsp. Orange aroma or zest of 1/2 Orange
There are two mixing methods, and I use the least common one.
The method used mostly is:
1. Mix together in a bowl the butter and the cream cheese. Mix for about 3 minutes until light and fluffy.
2. Add the powdered sugar and mix just until combined or it'll get too soupy(that's where I always mess up). Add the aroma or zest and stir with a spoon. Refrigerate for 15 minutes.
You can apply the frosting with a spatula, a knife or you can use a decorative tip and get all creative on them. You can color the frosting and create cream cheese pumpkins or you make little fondant pumpkins to put on top( I used marzipan to make pumpkins. It tastes great and just looks also as good as fondant).
The method I use is:
1.Beat the butter for about 3 minutes until light and fluffy. Add the powdered sugar and mix with the butter until it has the consistency of really thick buttercream.
2. Add the cream cheese and mix until everything is combined. Add the orange and stir with a spoon.
You can use whatever method you're more comfortable with.
