It's pumpkin season, and to celebrate this I thought of a recipe that is easy and quick to make, but soooo yummy: Spiced Pumpkin Streusel Muffins.
I thought of this, when I made the Light Pumpkin Spiced Latte and while creating them I used the same spices. And it really is good.
I especially love the color they're gonna have because of the pumpkin puree.
For about 12 Spiced Pumpkin Streusel Muffins you'll need:
2 1/4 cups(180g) Flour
1 1/2 Tsp. Baking powder
1/2 Tsp. Salt
1/2 Tsp. Cinnamon
1/4 Tsp. ground Nutmeg
Pinch of ground Ginger
3/4 cup(170g) brown Sugar
1/2 cup(120ml) Oil, sunflower oil works best
2 large eggs, at room temperature
1 cup(about 240g) Pumpkin puree
maybe 2-3 Tbsp. Milk
Streusel:
3 Tbsp. Flour
3 Tbsp. brown Sugar
3 Tbsp. cold!!! Butter
1/4 Tsp. Cinnamon
Preheat oven to 350°F (180°C)
1. Sift together the flour, baking powder, salt and the spices.
In a bigger bowl, mix together the sugar and the oil. Give it a quick stir. Add the eggs, one after the other and combine each egg well.
Add the pumpkin puree to the sugar-oil-eggs mixture and stir until everything has combines and no longer pumpkin lumps are visible.
2. Add the dry ingredients in 3 steps to the liquid ingredients, but be careful, you don't want to have all the flour next to your bowl.
When all the flour has been added, and if the batter is a bit to thick add 2-3 tbsp. of milk.
3. Line a muffin tin with paper cups and fill the cups until 3/4 is full. Crumble plenty of streusel on top of the muffins.
Bake for 15-20 minutes. But to be sure they are done test them.
Tipp: Make the streusel before starting the batter and put them in the fridge so that they can chill for a few minutes. When you do that, the streusel won't "melt" so fast and will be more crispy. Also make more streusel then you need and freeze them, so you will have some handy when you need 'em.
The pictures are not as good as I hoped they'd turn out, but the light sucked today.
Try them out they are wonderfully fluffy and light and the taste is great. Just the right thing now. Best would be a hot cocoa or a pumpkin spiced latte to it, to enjoy this tasty treat even more.
