1st the cookie, then a layer of cherry jelly, then rolled out marzipan and finally a sugar icing finish.
It is really time consuming, but well worth it, because those cookies look fantastic and taste fantastic too. I made them yesterday and I had to beg my family to leave some for a few photos, because they just wanted to gobble them all up right away.
My brother even noshed some in between the various stages.
I gotta warn you again it really takes time to finish these cookies, because you have to coat all the cookies with the cherry jelly, then knead powdered sugar into the marzipan and you have to roll it out and cut out the stars and then sugar ice them and decorate them. But they are really, really worth it. The different layers combine so well with each other.
For about 60 Almond-Marzipan Stars you'll need:
For the cookie dough:
1 1/4 cup(150g) Flour
1 Tsp. Baking powder
1/2 Tsp. Salt
1/3 cup(80g) Powdered Sugar
1 Tbsp. Vanilla Sugar
2 Tbsp. Milk
1 Stick(125g) Butter, cut into cubes
1 1/4 cup(150g) ground Almonds
For the layers:
7 ounces(200g) Marzipan
3/4 cup+ 1 Tbsp. (100g) Powdered Sugar
2 Tbsp. Cherry Jelly
For the Sugar icing:
1 cup(120g) Powdered Sugar
2 Tbsp. Lemon juice
possibly some water if icing is too thick
1. Sift the flower, salt, baking powder, powdered sugar and vanilla sugar into a large bowl. Add the ground almonds, milk and butter.
Either with your hands or with the dough hook of a hand mixer, process the ingredients until it holds together.
Cover your working space with flour and knead until it's a dough.
Flatten into a disc, cover with plastic and refrigerate for an hour.
2. Preheat oven to 350°F/180°C.
Take dough out of the fridge, dust working space with flour and knead for a few minutes.
With a large rolling pin roll out the dough, but be careful to always make sure that the dough wont stick to the surface. The dough should be rolled out not too thin.
Cut out stars and place them on a parchment paper covered baking sheet and bake for 8-10 minutes.
Let the cookies cool completely before finishing them.
3.To prepare the marzipan, sift the powdered sugar unto your working space, cut the marzipan in cubes( I think its easier this way) and knead the powdered sugar into the marzipan. Roll into a ball and set aside.
Now coat the cookies with a thin layer of the cherry jelly, it is best if you use a knife for it.
When you've finished doing this, roll out the marzipan, ( Make sure it wont stick to the surface) and use the same cookie cutter as for the cookies, to cut out the stars. If you have it, use a fondant rolling pin to roll out the marzipan, because it sticks less to it than to a normal rolling pin.
4. Lay the marzipan stars onto the cookies and press down gently.
Now it's time for the sugar icing. Sift the powdered sugar into a small bowl, add the lemon juice and stir until you've got a thick icing.
Spread the icing onto the cookies, not too thick, and garnish with some chopped pistachios, cashews, almonds or walnut quarters
I swear to you, that they're really worth their time, but maybe you shouldn't lay them all out at once, or they are gone so fast.
The ones you see on the photos above are the ones that are still left. I took the pictures this afternoon, and by now some already disappeared again. I think this plate will be empty tomorrow.
Well the positive thing about it is, that there is more space for more and new cookies ;)
