Chocolate....

"You can't buy happiness, but you can buy chocolate, and that's kind of the same thing"

And isn't that kind of true. Who doesn't like chocolate? 
Chocolate is a therapy where you don't need a doctor or an appointment. 
A piece of chocolate is like a little piece of heaven.

In fall when it's rainy and dark, when you crave a bit of happiness, chocolate is what you need. 
So here I present(insert drum roll here)  Chocolate Brownies!! And there really is nothing better than a fudgy, chewy brownie.


Chocolate Brownies

Ingredients:

1 1/2 cups (180g) Flour
1 cup (130g9 Cocoa powder
1/2 tsp. Salt
1/2 tsp. Baking powder
1 cup (225g) Brown sugar
2/3 cup (150g) Butter
4 large eggs, at room temperature 
1 tsp. Vanilla extract or 1 package Vanilla sugar
3/4 cup ( 175 ml)Buttermilk
1 cup (150g) semi-sweet chocolate chips or chocolate chunks
1 cup (100g) chopped Walnuts

Preheat oven to 320°F (160°C)

1. In a smaller bowl, mix together the flour, cocoa powder, salt and baking powder. Do not forget to sieve the flour and cocoa powder!

2. Melt the butter either in a microwave or over medium-high heat in a sauce pan. Let the melted butter cool slightly for about 5 minutes. In a bigger bowl cream the butter, brown sugar and vanilla extract. Add the eggs, one after the other, and mix well after each.

3. Add the flour-cocoa mix in three steps. Stir until everything is blended. Now add the buttermilk. But be carful when stirring, so as to not make a mess.

4. Add now the chocolate chips or chunks(whatever you have at home) and if you want to the walnuts. The nuts are not a must, but I can assure you, they make the brownies even better. If you do not have walnuts or don't like them, you can take whatever nuts you like ( pecans, macadamias, etc.) or you leave them away.

5. Grease a brownie pan, if you have, baking sheet, or a casserole dish. If you like your brownies thicker use a dish that isn't too long and is high. If you like them a bit thinner I would suggest a baking sheet or even better a dripping pan.

6. Bake brownies for about 30 minutes, but do the cake test to be sure. For those who don't know how to do the cake test, take a toothpick and insert it into the cake if it comes out clean the cake is done. But with a brownies its okay if there still is something sticking to it. Brownies have to be a bit soggy, and chewy.
