Peanut Butter Cookies

First off, I wanna tell you all how sorry I am for not posting for the last few days. I'm really, really sorry 😞.
And actually I wanted to post something yesterday, namely, Chocolate Chip Cookies. An recipe that is normally fool proof and really easy, isn't it? Well, yes I thought the same and I made chocolate chip cookies so many times, but yesterday it just went all wrong. I was just like "What the hell is going on here, is it 'Kim just can't get anything right today day'?" . 
I almost started baling my eyes out in the kitchen, which is so not a nice picture, believe me.
Thats why I made these Peanut Butter cookies, for 1. To proof myself that I haven't lost my brain overnight and 2. Just to feel good and enjoy some cookies ;)

The recipe normally calls for creamy peanut butter, but I wouldn't be owlicious if I wouldn't do it my way😜, so I use chunky peanut butter( I mean come on it really tastes much better if you have some peanut chunks in it) and I add some peanut butter chips, which I loooooove.
It is easy peasy to make, share and of course to eat.

For the best Peanut Butter cookies ever you'll need:

2 1/2 cups(300g) Flour
1 1/2 Tsp. Baking powder
1/2 Tsp. Salt
1 cup/2 Sticks(225g) Butter
1 cup(225) Sugar
1 cup(225g) Brown Sugar
2 large Eggs
1 1/2 cups(340g) Peanut Butter( either creamy or chunks)

1. Preheat oven to 350°F/180°C.
In a medium sized bowl, sift together the flour, salt and baking powder. Set aside.
In a large bowl, cream the butter and both sugars with an electric mixer until fluffy, for about 3 minutes.
Add both eggs and stir until they're combined then add the peanut butter. Scrape down the sides of the bowl.
Add the flour in 3 parts and mix until combined after every addition.
Cover with plastic and refrigerate for 30 minutes(honestly I didn't do that and they turned out perfect).

2. With 2 Tsp. place little heaps on a parchment covered baking sheet. You can also use 1 1/2 inch ice cream scoop if you have one.

Press down the cookies gently with a fork( I didn't do that either).
Bake the cookies for about 15 minutes until they're golden brown.


You can eat the while they're still warm or enjoy them when they are cooled with a nice glass of milk, a classic.
